It goes back to pre-Christian times when people believed in spirits that lived in trees. Touching wood was to invoke the goodwill and/or evade retribution by the spirits.

just had a quick look on the net and some of the reasons are 1. you touched the cross (symbol of christianity)
2. pagans used to touch the wood on the rees to placate the evil spirits that lived in the tree

Its a legend, they say gnomes live in the wood who like to cause trouble, so when you knock on it it causes them not to hear your "good news" and try to mess it up

it's an old saying, sometimes meaning someone doesn't want to jinx themselves or they dont want that to happen.
