They chant something like awooo!awooo!awooo! which is similar to our military saying houa or oorah... kinda just something for intimidation and morale
Though it doesnt show it in the movie, the Spartans are after all normal humans, so they have to sleep... back then, war was a lot more regimented and scheduled than what it is now, and armies would get up and fight at dawn and stop at dusk, and then they would sleep through the night and keep fighting until some one won, so yes, they would sleep at night

yes they were able to sleep. Back then war wasn't waged at night, just during the day and it wasn't raged during bad weather either. The chant was just a raising chant like the military does now with HOORAH. Get the spirits up and gets them ready to go to battle. In the movie it showed them sleeping when he was walking among them and they were all passed out on their shields and such. It also showed them drinking, which I am sure that after they drank they slept...

In true ancient Greek wars, the fighting was nothing like it is today. It wasn't a free-for-all battle zone all the time. They started their fighting in the morning, and then ended it at sunset. They slept at their camps, and in the morning met to start fighting again. Only spy missison were ever unplanned like that.
