Ok, when it comes down to poetry, I really don't know how to analyze a poem's feeling or attitude. My question is, how does a poet use language to describe the scene and to convey mood and meaning?

Writing a poem is like painting a picture, using words.
Poets, and writers in general, use descriptive words: verbs, adverbs, and adjectives.
The mood and meaning of a poem can be set by: word choice, the sound of the words and the pace of the lines and poem. The meaning a poem can be hidden in the word choice or lack of words.
However, there is a totally different ingredient to poems, that poets sometimes forget about: the reader.
A reader may come up with a mood and meaning that differs from what the poet originally intended.

The exact same way you use language to convey mood and meaning if you are yelling at your mom or trying to ask a girl out to the prom. Just read the words - -the feeling and attitude is right there. Is he writing a love poem? A happy poem? An angry poem? You should be able to figure that out fairly easily. Just take a deep breath and read slowly - line by line. Make notes if you have to or highlight important words. You will get the meaning. Pax - C.

Poetry so much more than not is a verbal description on how the world affects ones soul . That is a process that is hard to put into words believe it or not . there are times when just one line or phrase will come into my mind . From that one line or phrase a stanza will grow etc... til I have a finished work . One thing I have noticed is that my best work comes to me when my emotions are peaked out.

Poets "show" rather than "tell," so in addition to paying attention to the words' plain meanings, ask why certain imagery, symbolism, or even sounds were used, and what kind of overall feel that creates.
