why are mathematics and theory the only practical ways to determine the temperature of the earth's core?

The only other way would be to dig down to the core to measure the temperature directly. We don't have the technology to do that - no one's ever drilled more than a few kilometers into Earth's crust.

Because we can not reach earth core.
