minimal: using the least number of components or elements possible. often used with decor, style.

simple: uncomplicated, easy, accessible, in a broader sense -- procedure, aesthetics, a situation, etc.

to distinguish, I consider minimal a stronger and more limited nuance -- not merely uncomplicated or basic, but truly bare bones. simple works in more cases than minimal. you could not say "It's minimal to get to my house from the store" but you could say "It's simple to get there"

close examples:
I'm in the mood for a simple meal - something uncomplicated, easy to make and eat.
I'm in the mood for a minimal meal - bread and butter and water. almost nothing.
