Check out Zoomarine-Algarve (near Albufeira - Portugal)
http://www.zoomarine.com/start.htm
Here are details last time I checked:
It costs 135 euros (£85) for dolphin interaction (90 mins).
You will need to pay the park entrance fee ~20 euros (£13) per person
The Dolphin Interaction is apparently a very special de-stress experience and people that have done have enjoyed it greatly.
Go for it! Hope you have a good time!

Try Zoo Marine in West Algarve. They do have dolphin shows there and there may be interaction programmes with dolphins.Zoo Marine is on EN125 between Faro and Portimao

If you go to Setubal you can take boat trips that will take you out to see the dolphins in the wild. I think the boat takes you out somewhere near Troy.

I am not exactly sure but you can ask about it where you bought the tickets or at the hotel you be saying at that is the easiest way you could also surf the net to try and find out.
