You got to find a converter that will convert your videos to MP4 format. I recommend Intervideo iVideo ToGo for iPod. Just download the free trial off any page listed on google, then register it using serial numbers from http://www.theserials.com/ . The converter is very easy to use and requires no explanation. Make sure you put the converted videos in a folder you can remember though (My Videos, My Documents, etc.). Don't try to convert your videos to MP4 with iTunes, since it won't convert most videos well (it'll convert video, but not audio, for videos which have muxed audio).
All you need to do afterwords is import those MP4 files into your iTunes Library and sync them onto your iPod.
