Water vapor. H2O. The water doesn't break down into oxygen or hydrogen or anything, it just evaporates. If you capture that gas and cool it down, you'll get liquid water, just like you do on the inside of pot lid when cooking something.

It is just water in the form of gas rather than liquid. That's why if you keep it boiling it will all disappear
