Well, to become a surgeon, you start out with a medical degree. To get to med school, you can study a variety of things as an undergrad. I am a chemical engineer undergrad and a few of my classmates went onto med school and are now doctors. Another friend was a biology undergrad. Some schools have pre-med programs.

If your college has pre-med program take that, otherwise life sciences or biology or biochemistry.

I believe they call it simply Pre-Med. I know that I'm considered a Pre-Nursing student.
