I recently saw a list that ranked the greatest guitar riffs of alltime. Stairway to Heaven and Sweet Child O' Mine were both on that list; and they're both songs I like. Exactly what part of those songs constitutes the riff?

Series of notes that are played together as a segment, and often played repeatedly.

So for sweet child o mine, it would be the beginning where Slash goes up and down on notes. Notice how it's mostly the same notes over and over? That's a riff.

How about the beginning of Enter Sandman? The most known part that keeps repeating, that's a riff.

AC/CD is a band that's full of riffs. Back in black, girls got the rhythm, etc...

Usually, the "riff" is the -as has been posted- part of the song that you remember the most, and that you can sing when you think of the song, Usually, it is the music that opens the song.
Examples:
Stairway to Heaven... when you hear the title, the first thing people normally think of is the arpeggio at the very beginning... another part is the jamm near the end, right before the line "And as we wind on down the road."
Enter Sandman... The opening notes INSTANTLY tell you what the song is.
Friends In Low Places... the part that the acoustic plays that causes everyone to go nuts.. THAT is the riff.

It is like the hook of the song, so the major part that stands out. So in sweet child of mine, what he leads in with, that tune is the main riff of the song.

Technically I think anything can be considered a riff, like a song is made up of different ones, but in this case I think they are talking about the main melody of the song.
