We need to know, what visas or permits are required and if renting accommodation is cheap enough.We've looked at loads of websites but everywhere is just holiday rentals

well you need to learn the language quick!
and you need to have some sort of plan visit the plae and see if you can't pick up some cheap property you can sell on, and make sure you find somewhere to start work as quickly as possible!

Skiathos is a very touristic island, especially may-september. So I don't think it will be cheap to rent. You will probably not find more permanent accomodation than holiday rentals through the internet, but from a local source if you can (locals telling each other). About work, you could probably find a temporary work during the holiday season, but i can't guarantee it. Regarding visa etc, it depends where you come from, ask at the Greek Consulate or Emabssy in your country.

Formally, you'll need a "green card" which is the working permit. As a EU citizen you'll get that automatically at the local police station (in Skiathos). I don't know what kind of jobs you look for, but many restaurants and hotels have rooms for their employees as the hire staff from outside the island. Most people I know who does seasonal work go to the island around Easter time and ask around for jobs/close deals for the summer. You'll find hotels/restaurants on the internet and can always start calling and ask for jobs. Wouldn't worry about the language in a place like Skiathos.

Do you know anyone in Skiathos ?
If you do - I'd be getting in touch with them now and asking them to help you on finding cheap accommodation and a job.
If you don't - you are taking a big risk in going there without sorting this out first.
Skiathos becomes very busy in the summer season and accommodation can be at a real premium. The better stuff will be let out to tourists, but you may be able to find lodgings with a family............but you'll only find that out when you get there - you'll never find it over the internet.
As regards working - there might be opportunities to work in bars, tavernas, etc. - but, with Easter coming, many places will be sorting out labour for the summer during April.
Just a word of warning. I come from a tourist island in Greece and many of my Greek friends run their own tavernas and restaurants. In summer, they have no time to enjoy themselves and neither do their staff. They are working normally from 10-11 a.m. through to 1-2 a.m. the next morning (sometimes later) with maybe an hour break in the afternoon for a quick siesta. If you want to work out there, there will be little time for sitting on the beach with a cool drink !
