Try searching on Sourceforge.org. They have tonnes of OSS (open source software) on there. I'm sure there must be some somewhere, because that actually sounds like a pretty good, and for some techies, fun software project.

Not really... A good POS system includes some specialized hardware (touch-screen monitor, card reader, receipt printer, etc.) So while some software may be available for free, no one came up with a way to produce free hardware yet...
