Hmmm, I have the urge to answer this before I lose the question in the vast sea of others. Very hard to answer but, here I go.
Best Ninja game: Ninja Gaiden *Xbox*
Best Racing game: Burnout Revenge *Xbox 360*
Best Stealth game: Splinter Cell Chaos Theory*Xbox* (Only because stuff was left out of the DA for Xbox haven't play DA on 360)
Best Horror game: Resident Evil/Resident Evil 4 *Gamecube*
Best WW2 FPS game: Call of Duty(only COD played)
Best Comic FPS game: XIII
Best Sci-Fi FPS game: Quake 4(Although I'm telling my self Halo. Over all has to be Quake 4 great story, great weapons, great enemies, great AI, great game creation. Things like they've created cover and your like in a firefight and think wow i wouldn't have thought to cover there, where as in some games you know exactly where they want you to hide and move to)
Best RPG game: Skies of Arcadia *Dreamcast* (but playing Zelda soon will have to come up to a lot to beat it though great game love it)
Best RTS game: Rome Total War *PC* (although you need to really read the manual be and be very dedicated to playing)
Best Platformer 2D: Sonic the Hedgehog (any of em)
Best Platformer 3D: Crash Bandicoot(any of them up to 3)

I'm a big fan of the Ghost Recon Series, Rainbow Six and Splinter Cell. Forza Motorsport for driving.

As much as I adore the Zelda series, my favorite game is Sonic 3 and Knuckles. I still find new stuff in that game, and I've beaten it entirely!

God/Sim: Civilisation 2
Strategy: Command and Conquer red alert
Sorry I cant separate these into an all time favourite they are so different

I think my fav is Tiger Woods Golf . I haven't got the 2007 version yet, but soon. I also like Zelda The Windwaker and Twilight Princess.
