There are many but the following 2 seem to be the best:

FDNY Firefighter: American Hero

Firefighter Command: Raging Inferno (RTS)
- If you are into RTS games, this is the ultimate in fire fighting!

Fire Chief. This game is pretty cheap and you can play as the US, UK and German fire departments.
