Depends on the size and magnitude of the party.

If its a friendly gathering and only a few people, I would suggest Saturday. People won't need that extra day to recuperate.

If its a huge blow-out I suggest Friday. Gives you Saturday to be hungover and Sunday to clean up the damage.

It depends on what type of party, and what other plans you have for the weekend. If the party will involve a LOT of alcohol, then Friday might be best so that both Sat. and Sun. can be used as recovery days. However, if you have plans during the day on Sat. then Fri. night wouldn't be a better choice. It all depends on what else is going on.

Saturday. Friday is a work day, so if a party is on Friday most people are more likely to bow out, since they are tired from work.

Well personally I think Saturday night. Most people do not have to get up early on a Sunday so they can stay up and out later.
