Why is that?

Because in the middle of the night, the sun's been down for about 6 hours. In the morning, it's been down for 12 hours. also, the ground absorbs heat from the sun and radiates into the air in the afternoon.

It doesn't seem to be colder at dawn, it IS :)

As the night progresses, the temperature drops because the sun is not present to warm up the air. The temperature will keep dropping through the night until sunrise.

The coldest part of a day/night cycle is right before sunrise.

The air and the water and the earth, which gathered heat the previous day, has had all night to release it and therefore is coolest just before the sun rises again to repeat the process.

Because it usually is. The atmosphere and the earth have had all night to cool instead of just a few hours.
