Some people can roll their toungues, that is, bend it into a shape that looks like an "o" from the front, and some can't. It's a genetic trait. Get your classmates and their families to show whether they can or can't. Find out what muscles are involved and why some people can do this while others can't.

There are also certain substances that some people can taste and others can't. This is also a genetic trait.

Here is a project that is easy to do with almost unlimited experiments available.

The tongue's taste sensors are divided into different sections (e.g. bitter, sweet) but the taste is also heavily reliant on the visual aspect of the food (or whatever else you're tasting). For example: if you take a peeled section of a tomato and sprinkle some sugar on it and have a blindfolded person taste it (don't let them touch it, feed it to them) they will more than likely think it's a strawberry. You could think up some of your own combinations (try different spices and such on common food items). Be sure to record what the combinations were and what part of the tongue they should have affected (bitter, sweet etc.) and what the person being test thought it tasted like. You can then draw statistical references (e.g. 80% of the people tested thought the sugar cover tomato tasted like a strawberry, 20% got it right).

When considering the size to force ratio in comparison to the sum total of muscles in the body, the tongue is by far the strongest muscles of the human species by far. When given that bit of knowledge of human physiology, I am sure there are no specific studies on the tongue and its capabilities outside of the realm of speech and measurements of verbal/audio communication.
