Thus the start of April Fool's Day. The pagans celebrated spring because of the season's fertility. Thus the egg, like the easter egg, was a pagan symbol for spring. It's possible that the entire Eostre legend was invented by the Venerable Bede in the 8th century because she liked the sound of it.
