observe all their activities from opening to close
you will know 75% of the business techniques
and the balance 25% is
well planned work is half done.

Dear smart entrepreneur, you would get some serious & valuable suggestions from a business consultant.
You would get only superficial answers here as no one on Yahoo knows what you mean by a 'big' store, no one knows your financial background or the business sector you are interested in.
