That's because that's how it is. The movies that show people sinking all the way is completely false. The TV show Myth Busters on Discovery Channel debunked this myth. They made the finest and most deadly quick sand and the guy only sunk up to about his upper chest. When someone pushed him down he'd just pop right back up. This effect is due to a person's buoyancy .

Because the script requires them to shout for help or allows them space to breathe while negotiating how to get out of it. A movie that shows people fall into quicksand whole and never get out of it is horrifying and disappointing to the viewers.

They don't always - but it's for the same reason the bomb countdown always stops at 00:01 - it makes it more exciting.
In The Princess Bride, when they fell into the lightning sand, both Buttercup and Wesley disappeared completely.

quicksand isn't normally super deep...just hard if not impossible to get out of. Most people would die of exhaustion I would imagine trying to get out and then just wilting away (nice thought).

Because they make it thrilling but we all know its HOLLYWOOD. Oh and thats where the floor is, they set it to their hight where only the head shows. Some movies they actually sink.
