What is the easiest way to do a one-track recording of just an acoustic guitar and vocals(all wood room)?

make sure your mike has a multi-directional function, and that you have enough space between the singer and the guitarist ( if they are 2 people), so that each sound is given enough "room". If it is one person, you'll need to experiment with the placement of the mike more carefully.
Try not to play/sing into a corner, you'll get too much reverb from the wood. Sitting center will give that "all around" sound.
