trees grow from bottom to top, but can you stop this process?

Trees have apical growth, they don't grow from the bottom up. They grow from the tips out. One scientific method to stop this process is to use a chainsaw. They have been doing it to old growth Tasmanian forests for years and it works very well (sigh)

1. Get a saw, chop the top of the tree off.
or
2. Kill the tree, that way it won't grow anymore.
or
3. Freeze it to bring it's metabolism to near zero although this will probably kill it in the process (refer back to #2).

sit on the ground on top of the acorn and do not let it grow up

If you cut their roots from sources of food. This would kill it though.
