We can never know who people really are if they want to hide it from you. Even if you caught them in the act doesn't mean anything. We all do stupid things against our nature sometime.
All you can truly know about a girl who tells you she is straight is that is what she wants you to believe. Keep in mind people lie to themselves all the time, so she might think she is straight, but simple isn't comfortable enough with that part of herself yet.

A persons sexuality is defined by how that person feels, not what another person thinks they are. So if she says she's straight, then she's straight.
