Lol!!! So funny - great observation.
I often wonder the same too....I know it's gross, but you chew it and chew it and it still remains whole in your stool?! What the he**!

Its very high in fibre (the outer shell of it), so while your body disolves the soft insides and absorbs them, the rougher, "stronger" outer shell can resist the stomach acids and pass through relatively unaltered.
If (and I'm not suggesting this) you were to collect the corn from said excrement and give it another "run through the system", you would notice that less would leave again. Wax-rinse-repeat would have all of it disappear.

the corn does digest but the fibrous part on the outside of the kernel, the lil clear shell doesnt digest because its fiber

They don't stay in the stomach/digestive track long enough for the acids to work.
