Why was China the most advanced civilization? What were some of its most important achievements?

To say China the most advanced civilization you need to specify a time period. The earliest civilization were in the middle east, and on the Indus and Nile rivers. Was China more advanced than the Roman Empire? However compared to Europe in 1000 CE China was way ahead.
Paper, printing, gunpowder, guns, the stirrup, the compass, porcelain , canal lock gates, fishing reels, hot-air balloons, the umbrella, mechanical clocks, and paper money originated in China
The Mongols were successful in their conquest because they excelled at Calvary warfare and organization, and the great civilizations had not yet developed technology that finally put a end to the invasions from the steppes.

China was an advanced civilization in the Ancient Times for many reasons, but due to its isolation (The Great Wall) it was left behind in many others too. I'm not an expert, but I can tell you that the Chinese Astronomy was way advanced in comparison to the Greek one. It is a common mistake to say that the Greek Hipparchus was the first to create a Star Catalogue, but that was around the 1st century BC, and Gan De did it on the 4th BC. He might have seen Ganymede (one of Jupiter's moons) in his time, way before Galileo Galilei made his celebrated 'discovery'.

Also, you can take into account the invention of the compass (11th century) and the gunpowder (the first reports of its use are from 142 A.D).
