when referring to an appendix (i.e. collection of supplementary material) can you say something like "I appendixed Section C to the report"?

Normally you would append something to a report. The word appendix is only a noun not a verb. The verb form of the word is append or in the past tense appended.

You "could" say it but it would be grammatically incorrect since appendix is not a verb.

there is no past tense of appendix.
but you can append something to a document(ie add)
plural would be either appendixes, or appendices

you can use attached or included instead, since appendix is not a verb.
