I've heard the itching "means it's healing", but what exactly in the healing process causes this itching sensation?

it's mostly the scab itself being contracted as it heals, because scabs heal by pulling towards the center. that pulling on skin causes it to itch. sorry i don't have a more detailed or interesting explanation.

it means that as new healthy skin is growing underneath the scab the position of the injured skin changes, and as it stretches it pulls the pores open, just a tiny little bit, that's why it itches, once you scrape it off you relieve the tension so you can't see it, but if you do, the skin is not gonna heal properly and will leave a white ugly scar!

it is in the healing process, the underside of the scab is still damp and the upper side is dry, causing the skin to "draw", making it tight as it is forming new layers of skin underneath and causes the itching.
