It is edible, so much so, that there is a KOSHER Jell-o on the market, they use carageenan as the gelling substance. Jell-o is made with cow or pork collagen. There is no nutritional value in it, whatsoever. Apparently, it is good for your finger nails and hair, though. I was told to 'eat' more of it to build my hair and nails back up after surgery. I couldn't get past the fact that I was eating something that moved on it's own.
