the 6 speed will easily handle your iroc-z engine and should bolt right in with a few modifications to your trans. crossmember and driveshaft, I'm not sure about any electronic hook-ups that would be needed.

It is not easy to convert an auto to a stick. It is easier to go the other way. Although a bell housing with clutch should bolt up, you would need to install a clutch pedal, a brake pedal from a stick, a proper length drive shaft and an ECU from a stick. The list gets longer the more you think about it.
Just sell it and buy a 6-speed model. It will be cheaper that way and you won't have a cobbled together car.
