I am just interested to know what exactly does the state do with a "big time" drug dealers money, and belongings after prosecuted and convicted??

They keep it for evidence until the person goes to court. If found innocent, the possessions and money are returned. If found guilty, all items (drugs and money) are kept for sting operations, undercover drug deals for bigger dealers. The possessions are auctioned off.

Usually the legal possessions are auctioned off by the government. Lots of cars, homes, etc. The drugs are destroyed.

The money stays in Law enforcement in that particular jurisdiction; and properties (Cars, Boats, Homes ECT) are sold at auction at State level, and State Law enforcement
keeps this money.
