I bought these plans for over $300. Now I wish I could widen it ,add a longer porch change the roof and add a loft but I don't want to just buy more plans. Should I?

Those are very cheap plans.... go back to the people you bought them from and see if they will swap them for you. Otherwise, try and on sell them and buy a set of plans that provide what you require.
An architect designed home specific for your land is the best method but $300 should buy you about two hours of time... not a full set of contract documents.

You can change them but you would have to hire a licensed architect to make the changes and stamp them for approval from your jurisdiction where you would pull the building permit.
