An emulsifying agent is something that keeps two materials mixed so they do not separate. Two liquids like water and oil that do not mix can be forced to stay mixed together by using an emulsifying agent. Mayonnaise is an example of an emulsion. The oil and water are forced to remain mixed by using an emulsifying agent in the mayonnaise.

An emulsifying agent is a substance that allows two imiscible fluids to form a colloidal suspension. A commonly quoted example is egg yolk in mayonnaise. Here we have oil and vinegar which when shaken together soon separate out into distinct phases. The addition of egg yolk forms a emulsion.
