My yearling loves to play with her ball. I went to Toys R Us and bought a large blown up ball. ( it's pretty big - about foot and a half in diameter - 45 cm) She kicks at it, pushes it around with her nose, tries to pick it up with her teeth and has managed to do so a few times. When she does pick it up she tosses it and then bucks and goes after it. I often kick it around and she runs after it.
It took her about 4-5 days to start playing with it. She was afraid of it at first so I would roll it towards her and she would run away. I just left her with it and she would go over and sniff at it and push it a bit and when she started that I knew it wouldn't be long before she would start to play with it.
They last about a month and then need replacing - she broke the last one by picking it up with her teeth.
Another toy could be the one that you fill with treats and then leave it on the ground. The horse rolls it around and every so often a treat falls out. Here is a web site that show it.

I think most horse's like Big Band music. Get him a CD, something he can dance to since he has a jolly ball. When he blows his candle out be careful of all that hay ou the barn!

I have 20 horses and honestly do not celebrate their birthdays, they do not understand the concept.
Now if you just want to give him something that is fine.
My stallion loves playing with a red cone (for traffic diversion), he just tosses it around more so than the big red hard plastic ball.

Celebrate by giving him extra treats, extra time in the pasture, and a break from working/training. Get him another toy and play w/ him lots!
