The greater the memory, the "smoother" the playback is. It has to do with buffering the image.

basically the same thing that your system memory does, it takes files that are required for the video part of a game and puts them on the memory for quick and easy access, which is needed for games, generally the more memory on a video card the better (not always tho, look at the core clock speed and the pixel pipelines also)
