A person can have an unquenchable thirst for knowledge. That means he can never stop wanting to know more, no matter how much he already knows. You can have an unquenchable thirst for anything. It doesn't matter that there is a handy and bountiful supply (a full well) of whatever you seek. Eventually you might exhaust the supply, but you would still be thirsty for whatever it was that you desired. Does that make sense to you?

Perhaps you long for another water? The Water of Life.

If you find it your thirst will be quenchable. The longing for it is rooted in every humans soul.
