it depends, you could always go the open bar route, where you buy only a certain amount and kinds of alcohol and let people go up and get it themselves.you could do waiters, only problem,is it an event where people are sitting down, or are they mingling?sitting might require drink orders being taken with a list of drinks that are available, while mingling would only need certain wines or champagnes.maybe a red and a white just so people have the choice. Anyone requiring something different like scotch or just plain water would have to ask one of the waiters carrying the tray around the room. That way, there aren't many dirty glasses left sitting around, because you just sit it on the tray when the waiter passes an grab another.
depending on the event, use your judgement about kinds of alcohol and the age range of people in attendance. Scotch,a nice wine, some type of cognic, beer, it all depends on what's going on.

I like to have a watermelon, chop the top off and moosh the insides about a bit to make enough room to pour in a bottle of tequila. Let it sit for an hour or so to really soak up the juices. Use a soup ladel to serve and when all liquid is extracted you can eat what flesh is left. Mmmmm a real hit with me. This is probably at your less reputable type of gathering, you know bikers and long haired hippen dudes.

In this day and age of DUI and legal responsibility, I would recommend the day of indulgence not happen at all. At least on my dime or property. Dry party, BYOB.
