I believe because the Catholic church was very powerful at this point and exerted a powerful influence over the ruling monarchy. The Crusades are an example of the church trying to spread Christianity and take back control of the Holy Land, which is holy to both Christians and Muslims.
The high point I would think was the power that the church had and the numbers of forces it amassed to go on Crusades.. (personally from a moral standpoint I wouldn't consider the Crusades a high point, I would consider it a low point. )

I don't know. I would think that the crusades were a total failure as they never retook the city of Jerusalem and kept it. They did however introduce Chritianity to a lot of people and help spread it throughout the territories. The highlight was the end of the black plague and the formation of the various different countries which were formulated by one tribe or sect of people taking over the other for a concerted effort to protect their homelands. The crusades were basically a military failure.

Also, they managed to gain a large amount of technology. At the time, the islamic nation was the most technologically advanced in all of Europe.
