If you are asking what is the highest organ is compared to the highest point on your body that would be your skin. Since your skin goes over the top of your head and that is the highest part of your body except your hair (which is not an organ). If you mean your most important organ than that would be your brain your body can not do anything without this organ.

Technically the skin, which as you know is an organ and its highest point at the top of your head where it passes over your skull, must be the 'highest' organ
