It's like a whirring sound...kind of like a whine. (stressful whine)
It's quick and will cut any body parts in the way...like fingers.
Really depends on your drag setting.

I've been fishing all my life.
I agree with leemucko here. It depends on the reel and equipment you are using and what kind of fish you catch.
I've caught many LARGE blue gills (12 inchers) on ultra light equipment and open face reel. Not really a sound other than the drag, which is more like a grinding of the ball bearings inside the reel.
I've caught large bass and walleye on heavier reels which if they run your reel will squeel and grind again due to the resistance on the drag.
Steel head and Salmon, lighter tackel and you need to let them run, is like a spinning or whirling sound. If you are using fly fishing equipment, it will click rapidly.
Deep sea fishing, depending on the fish, like sharks and marlins, your open face down rigger will Buzz (squeel) loudly until you draw it tight. Even then it will click and squeel or buzz. To describe it any better would be Weeeeeeeeeeerl click click click.
Also, depending on the fish, you will feel the line pull slightly a few quick times when they hit. This is true of bluegill, perch, and catfish before they take it. It is called bumping.
Bass usually just smash it. Taking it and running the opposite way with it. They will pull your pole and your line at the same time.
Crappie are tricker. If you are using a bobber, you can watch the bobber move back and forth before they take off with it. Jigging for crappie, they pretty much hit it and run. There is no bumping. They grab it and go with it.
Any way you will feel the line start to tighten then pull. Sometimes really soft, sometimes like someone is pulling it out of your hand.
Sometimes you can have bait sitting on the bottom and nothing moves or pulls. When you go to reel it in you have a fish. They just swallowed it and sat there.
This is the trick to fishing. Knowing when to set the hook and knowing when to leave it alone. I have been a member of the Bass Masters Association of America womens for many years. As well as a number of other fishing clubs. If we could all figure out just what is going on under the water, we would all be in the top rankings! LOL

That would depend on the reel you are using and the kind of fish you caught.
With an open face reel, large mouth bass don't run with the line, they hit the line and there really isn't much of a sound. It is more of a clicking from your reel.
It is like someone pulling on the end on the line. Then you will feel them pull away.
Deep sea fishing, the line will squeel. Which is the tension of the line against the drag of the pole.

It depends on the type of reel you are using. Some have clickers that alerts you of a large catch. If you have hooked a very large fish, you will see your rod bending anyway.

There is no one sound. It depends on the reel and the gears in it. Every reel will have a different sound.

and you'll hear a medium pitch whirring sound
as it swims away fast the noise will get louder
