The best hotels on the Riverwalk are La Mansion del Rio, The Hotel Valencia, the Westin and the Watermark. All of them are not cheap, but great hotels. La Mansion is an historic hotel built in the old St Mary's school. It has amazing character. The Valencia is a very chic modern hotel, similar in style to a W hotel. The Westin is a classic. Its very comfortable. They have amazing beds and the bathrooms are great. I have not toured the Watermark yet, but I hear incredible things about the spa. Its very new and extremely well regarded in the industry.
If you want a resort, Westin La Canterra is beautiful with great golf. It also has a children's program, if you have kids along. The Hyatt Hill Country is very nice, too.

It depends what you have to spend and what part of town you want to stay in. Downtown the Palacio del Rio or Marriott River Center are both very nice but high priced. The Hampton Inn downtown is also nicely situated and a bit less expensive.
In the Sea World area you could stay at the Hyatt Regency (very pricey) or Radisson (pricey) or any of the less expensive chain motels (La Quinta, Days Inn, etc. on Loop 410 near Hwy 151.
The airport location is convenient to downtown, Sea World, and Fiesta Texas. Choose from Hilton, Hampton Inn, Coutyard, Fairfield, and Drury Inns.

Omni La Mansion Del Rio is wonderful!!! It is a bit pricey but the staff are really great and it has a great location on the river walk. If it is too much, The Menger is good to. The staff there kinda sucks but it is priced well for it's location which is right next to River Center Mall.

I stayed at LaQuinta last spring. It's within walking distance to the Alamo, shopping, convention center, etc. And they offered free breakfast daily.
