Ask him for feedback - like this, "Boss, I know you want us to be successful just like I do. I've been doing this job for a while now and feel like I have a pretty good handle on what needs to be done. When you give me detailed instructions on tasks I've done before, it gives me some concern that I'm not doing things the way you want them to be done. Could you give me some additional insight into what you think of my performance?"
My bet is he doesn't realize he's doing it and thinks that a "boss" has to give a lot of direction.
You may also want to find an article on situational leadership and forward it to him. It would appear that he is in the "directing" stage with you when he should really be in "delegating."

Yes, i know that you have done all those things but remember he is the BOSS and you will have to accept his intervention in what you are doing. I would suggest that if you are tired of your mundane, repetitive job that you should leave the company.
I am a firm believer that our job should bring out the best in us and i do not see this happening for you, maybe this is not the right place for you and i know deep down you are a great person. Do not let this job spoil your personality.

Next time he comes up and starts preachin, just interupt and say
" hey Joe, i now how to do this, its okay, you dont have to worry about me.Unless you have somthing different to say....?"
Then i would just turn around and continue working.
he will either go Oh, okay and walk away or he will still try and boss you. Some people just need to be in control all the time no matter what it is. If that is the case you are either gonna have to blow up and stress your problems or just smile and nod and ignore him when he comes over.

I would schedule a meeting - just the two of you - to discuss.
I would say, "Listen. I'm capable, competant etc...and have created this system from the ground up. I feel that you are treating me as an invalid and I would like more credit."
Maybe he doesn't realize he's doing it. A lot of people don't realize, or take the time to see, how they come across to others.
