I have bought all of the materials and now have the time to devote to a bonsai but I don't know from which tree to start from, I rather start from a seed rather than buy a tree already dwarfed, does any one know a good tree to start from?

An evergreen tree like a cedar is a good choice. It is easily shaped and doesn't have leaves that are hard to control in keeping the tree somewhat symmetrical.

First you must decide if you want to grow one inside or outside. If
outside, I'll need to know where you live so we can determine the weather. You'll want to look at my website:
http://www.american-bonsai.com to give you a better idea of which trees are used for bonsai. Once you have determined inside or outside, then we can discutt which trees will be easier. Starting from seed is not a good way, it is much better to start with a tree that is already established. You'll want to look at the pre-bonsai on my site for more ideas. You can do it with a lemon or orange tree
