is it a Bmw by a chance??
Sounds like he hasn't done all the bolts up on the manifold, this has happened to me when i got someone to change my gasket on my car, he snapped a manifold bolt were they were really rusty, so the car sounded noisey were it was blowing.
Where the car is over heating you need to make sure that he has bled the water properly & there is no air locks, he might of done a good job with the head gasket but not with the water, this has happened also with me, I had a little bleed screw on the radiator which I slightly turned till the water came out of there, Get someone else to have a check over as if you do have an air lock it will ruin the gasket again! if all is ok & still over heats it has probably a cracked head : (

You've answered your own question - mechanic - dodgy!
No reason for your car to sound that way after a head gasket change - it might simply be down to the coolant needing bleeding thru the system - sometimes they can get an air lock - Rovers are renowned for this!
Start the car and allow to warm up - before it gets too hot take off the coolant cap - see if there is any air bubbling to the top. If there is that might cure it - just keep it going until all the air escapes.
BUT, on the whole - if you're not happy - take it back and tell him to sort it!

It sounds without a doubt as though the job has not been done properly and you need to act quickly before you lose your engine.
the chances are he didn't have the head pressure tested and checked for warping and just refitted it as is. If it is an alloy head then it will warp as soon as it is removed from the block and it will require skimming and my guess is none of this was done.
Take your car to a reputable garage and have them check it out and then take the findings to the bloke who did the head gasket in the first place. He's messed it up.

you have describe 3 different problems here.
1: engine sounds very loud = exhaust leak
2: temp gauge increases very quickly but when i start driving again it cools down again.
cooling system low or cooling fan not working causes this problem.
3: mechanic is a bit of a dodgy
always check with BBB before using a shop you are not familiar with

When your gasket went bad initially did you heat up that engine?? If you did your head may be warped?? New head gasket wont help that your going to need to get a new head?? Take it back to the shop they should have checked that before just replacing the gasket!!!

Sounds like the gasket is the wrong one, or maybe installed incorrectly, maybe the water cooling passages are blocked, with bits of old gasket. The only cure is to do the job again, or you may fatally overheat the engine.

Take it to a reliable mechanic and get a second opinion of what is wrong and what it will take to fix it right. The overheating sounds like he didn't re-connect your cooling fan. Once you know, get it fixed, then take the bill back to the first guy and ask him to pay for his mistakes. If he refuses to do that, you may have to take him to small claims court to get reimbursed.
Also if your area has a licensing bureau for mechanics, notify them of what happened to you.

Check your oil and water levels. Could be any one of a dozen things he's made a mess off. Have a competent mechanic have a look at your engine.
