Right click on the main window and go to properties. You can lose all color there if you want to. But wouldn't it be better to get a monochrome monitor?

It might be greyscale, not black and white. You can at least see what it would look like by pressing PrtScr, opening a graphics package (such as the free IrfanView), using Edit then Paste and Image then Convert To Greyscale,
