can the engine in a ford taurus fit in a mercury sable.

They will fit but you'd better plan to use the trans that is in the car presently other wise you'll need to replace half shafts. You'll need the exhaust manifold and converters that came with the 3.0.

Mercury is a division of Ford Motor Company. The Mercury has a Ford engine in it now (re: mercury engine is a 3.8 v6). Yes, the Ford 3.0 is compatible. In fact, the Sable and Taurus were made at the same manufacturing plant. They are basically the same car (minor cosmetic differences).

The engine and transmission computers have to be changed as well, along with the wiring harnesses.
Do yourself a favor and sell it for parts.
