I live in Peru and they dont sell them here, so I am going to buy them at B&N. I was wondering if they have illustrations like the Harry Potter books or any illustrations at all ? If so are they in the hardcover edition only or in the paperback also ?

I also found two different paperback editions one with the girl and the polar bear on the cover and another black with what appears to be a bear. Which to buy ??

They are all available in trade paperback (the larger pbks), I don't know about mass market pbks. The different illustrations might be different editions. The Golden Compass (the first book) was published in Britain as Northern Lights. Same book, different title.

I have seen a few different editions of these books, and none have full, or even half, page illustrations. There are sybols at the beginning of the chapters in the hardcover editions, Pullman's own illustrations of what I think are the symbols on the alethiometer.

The editions I have don't have illustrations. And as for what book you want to buy, as long as it is the first book in the series, just pick the one that has the nicest cover.
