Wikipedia has a good overview of this as a starting point. Like many things, information architecture can be subdivided into various aspects and each of them would have a different educational path.

If you are interested in the visual presentation of information, you might start with studying graphic design. Related areas of wayfinding, signage and mapping could also be part of this. It would depend on the school.

If you are interested in the functionality of the digital information system, you would study computer science and programming.

If you are interested in the content, you might study library science, or you might study technical writing, depending on if you want to be creating the content information or working with/interpreting existing content.

This is a field of study that is often team oriented because each person brings his or her own area of expertise to the information in preparing it to be used and accessible to others.
