Most run as a service. Open up your control panels and admin tools. Go into services. Find the process(es) for antivurus (the name should be obvious) and just stop the process. It will start next time you reboot, or you can go back in and start it.

This is generally done in the options for the particular AntiVirus software you use. But, if you have active protection, there should be an icon located on the taskbar down by the clock. Just right-click on it and it will bring up a context menu of options. One of which should be 'Disable Protection'. To re-enable protection, you can just open the software from your start menu, reboot the computer, or - in some cases - wait a few minutes to an hour and it will re-enable automatically (Kapersky for example).
