Get together without planning anything specific, and then let him choose what you guys are going to do that day. Don't sway his answer or let him get by with "I dunno, what do you wanna do?". Finding out the ways that an individual really enjoys spending their time is the best way to gain insight as to who that person is.

I would go have a couple drinks, even if it means buying dinner. Alcohol, in moderation, will loosen him up. Just be careful not to drink too much yourself and say something stupid.

Do something fun that neither one of you does well, like going bowling. The laughter that will ensue will loosen you both up, and the conversation will be more natural.

I find talking about each other's family/childhood let's you learn a lot about someone. You end up with little nuggets of information about things that bother them, they think are fun, what they disapprove of, etc. The nice thing about talking about family is that you don't really need to think about what you are saying and it shows a lot of pieces of your personality.

I first meet them and make sure you are in deed mentally and physically attracted to them, over coffee, dinner, movie. To test them go to some hot popular gay bars where you are around plenty of good looking flirtatious gay men and watch his reactions. If he passes that never let that one go.

but from a perspective of someone else,

i ask what is their favorite president
then ask why
stuff like that

i go for intelligent girls who have nice answers, thought out, etc.

Well.. I haven't had a date in 16 years, outside of my husband... but I assess people with simple questions that show me if they take care of themselves... like "So what did you eat yesterday?" or "Do you party?" or "When was your last physical?"
