Galileo was an Italian physicist, astronomer, astrologer, and philosopher who is closely associated with the scientific revolution. He is often referred to as the "father of modern astronomy," as the "father of modern physics", and as the "father of science". In 1616, Galileo tried to convince the Roman Church not to ban his ideas. He laid low for a while, but somehow managed to alinate Pope Urban VIII by citing the Pope's words as someone else's.

Galileo was placed on trial for suspected heresy in 1633, was found guilty, and had a "reduced" sentence of house arrest unil the day he died on January 8, 1642.

During the Inquisition, many "heretics" were put to death by beheading (head on a block). Galileo's head was metaphorically put "on the block" and he is simply LUCKY to have walked away from his trial. "the crime was looking up the truth" is referring to Galileo's unabiding urge to keep looking up answers to his questions and support his theories.

Galileo was punished, even though he was largely right, because the Church didn't like hearing what he had to say. And 'looking up at the sky', because his work had to do with the sun and planets, and his ideas that the earth went around the sun instead of the other way around.

Galileo was almost put to death late in his life by the Catholic Inquisition for insisting (correctly) that the Earth moves and the Sun stands still at the center. His patron at the time told him not to defend himself and to just stay quiet and he couldn't let knowledge and truth be supressed.
Plus he enjoyed baiting idiots who thought all knowledge could only come from the bible.

galileo's head was on the block : it means his head was on the chopping block as in beheading, in a figurative sense it meant he was being persecuted

the crime was looking up for truth : he went against the commonly-held belief that the earth was the center of the universe, in favour of a helio-centric (sun-centered) universe. this went against the catholic church and he was branded a heretic.
